For centuries cocktails have fuelled the masses through the highs and lows of everyday life. As much as we adore all aspects of cocktail creation, we recognise that classic cocktails are not typically made with sustainable practises in mind. Modern cocktail culture is of course teeming with new swanky methods of creating the perfect tipple and us much as we commend these efforts, there’s something special about the classics we can’t bare to miss - After all, they’re classics for a reason!

1806 is not on a quest to create brand new cocktails but instead to reinvent the classics with our planet in mind. We’ve teamed up with sustainable companies, developed low impact ingredients and radically reduced our waste.

  • Amaretto Sour 2.0

    White Possum Naked Amaretto | Bruichladdich Classic Laddie | Stone Fruit Sour Mix | Wonderfoam Blend

    Naked Amaretto is not only delicious, it’s also remarkably planet friendly. This spirit is packaged in 5 litre jugs which reduces its carbon footprint on shipping massively. The Amaretto itself is made from leftover apricot pits, utilizing and reducing waste.

    The Bruichladdich is a B Corp certified scotch distillery that has led a new generation of barley growth on Islay as well as championing biodiversity and rotational farming on barley farms. They have also been leaders in implementing new green technologies within the distillery to improve green energy technology and awareness.

    The Stone Fruit Sour Mix is created in-house with leftover fruit from the markets. The fruit is juiced, strained, diluted and then sweetened and acidified allowing it to act as both the acid and the sweetener in the drink.

    Finally our amazing wonderfoam blend which can be found as a substitute for egg white in all cocktails on the 1806 menu. This drastically reduces our personal waste every single service.

    Avallen Calvados | Bruichladdich Islay Barley | Apple Syrup | Honeyed Apricot & Smoked Hickory Bitters

    Avallen Calvados is a B Corp certified distillery - yay! Each bottle filled removes 2.73kg co2 from the environment. Bottles are recycled and labels are made in cognac from recycled paper and apple pulp. They also support bee charities in every country they sell their product.

    Bruichladdich is a B Corp certified scotch distillery that has led a new generation of barley growth on Islay as well as championing biodiversity and rotational farming on barley farms.     The apple syrup uses nearly expired juicing apples from the market that are juiced and then reduced to make the delicious syrup.

    The Apple leather garnish is created with leftover pulp from the syrup creation which we dehydrate.

    The shells from the Pina co-nada coconut rum have been carbonized to be used as a garnish for this drink also.

  • PINA CO-NADA

    Coconut Infused Plantation Rum | Tepache | Soda

    Our riff on the classic Pina Colada, the Pina Co-Nada has been created in partnership with Plantation - one of the first global companies to endorse Eco Totes, a large format refillable bottle that massively reduces the carbon footprint of spirits.

    The tepache used in this concoction uses skin off cuts from local juice bars to create an in house ferment.

    The garnish reuses both the coconut chunks that have been infused into the rum as well as a leather made from the pulp from the stone fruit mix in the Amaretto Sour 2.0.
